Home-made Basic Sofrito

Sofrito is used as a base for most traditional Dominican dishes. It’s a purée of vegetables and herbs blended together and super easy to make. It adds a bold flavor to your beans, rice, soups, stews, and chicken. Try out this recipe and keep a stash for your next dish.

Ingredients

1 bunch of cilantro

1 green pepper (seeded and chopped)

1 red pepper (seeded and chopped)

1 yellow pepper (seeded and chopped)

1 white onion (chopped)

1 red onion (chopped)

2 heads of garlic

1.5 TB of bitter orange or lime

Black pepper to taste

Directions

in a food processor, combine all ingredients. Place in a glass container, and use as needed, or freeze in portions. You may use ice tray to get the perfect portions.
